¾ cup butter, room temperature
1 cup brown sugar
2½ cups mixed dried fruit
1 cup roughly chopped glazed cherries
1 cup dried cranberries
zest of one orange
zest of one lemon
½ cup orange juice
3 large eggs, lightly beaten
1½ cup all-purpose flour
½ teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon mixed spice
1 teaspoon Jamaican pepper
½ teaspoon salt
¼ teaspoon nutmeg


* In a large pot, stir butter. ,Sugar, trail mix, cranberries, glazed cherries, orange and lemon peel, orange juice
*Simmer the mixture over medium heat for 10 minutes, stirring occasionally.
*Remove the pan from the heat and let it cool for 30 minutes.
*After 30 minutes, add the eggs to the fruit mixture.
*Sift the flour, baking powder, salt and spices and add them to the fruit mixture. Mix everything well.
*Pour the mixture onto the baking tray. If you are not using a non-stick pan, place baking paper on the pan.
* Preheat the oven to 150°C and bake the cake for 45 minutes, after 45 minutes lower the temperature to 140°C and bake for another 2 hours.
* When the cake is ready, we take it out of the oven and make a few holes in it with a skewer.*Prepare the syrup by combining ½ cup water, 2 teaspoons maple syrup and ½ cup brown sugar and bring to a boil.
*Pour the syrup over the cake, let it cool completely
*Remove from the baking tray, serve or store for a few days
